You think Kimbo Slice getting dropped by Seth Petruzelli was a huge upset? Then you have forgotten history. Check out what is arguably the greatest upset in fight history, when the underachieving Buster Douglas knocked out Mike Tyson in the 10th round on February 11, 1990 :

That is what I call an upset. Entering the fight against Douglas, Tyson was undefeated and absolutely wrecking foes as "The Baddest Man on the Planet". It is evident from the Tyson-Douglas footage that Douglas had talent, but he had always been prodigal and out of shape.

But what changed Douglas, at least for the biggest fight of his life, was the fact that his mother passed away not long before the fight. He dedicated the fight to his mother and was determined like no other.

Tyson, in contrast, was soaking in the glory and waste of instant fame and fortune. He was out of mind, out of shape. In retrospect, it was Tyson who had no chance.

P.S. Buster Douglas got to make only one title defense. He was knocked out by Evander Holyfield in the 3rd round in his next fight.
